Polygamy does not always refer to one man with multiple wives. That is called polygyny, and it is the most commonly seen form of polygamy. But other forms of polygamy include polyandry (one woman / multiple husbands) and group marriages (multiple husbands / multiple wives). So if the polygamy in the god realm is not restricted, you could have a Rin + Mayumi + Itsuki grouping just as easily as the frequently mentioned Rin + Asa + Kareha matchup. For that matter, you could have a Rin + Itsuki + Every-girl-including-Tsubomi group! The possibilities aren't endless, but they are numerous. :)

Back on topic - I'd prefer Ama as a wife because:
Ama is beyond cute
Asa is way too young for me
Asa loves Rin, so her heart wouldn't be in it

"18 and legal" is only true in some US states and some countries... one's local rules about age of consent are not global.

Here's a table of data for those interested ... it does not include details within a country (like Japan) but does include US state by state variances.
