I have a few.
Shining Days - Opening of course!
Mezame - The beat runs continuously in my mind.
Hajimari something - The beat also is good. Episode23 ending, where Shiho starts getting up after she falls, it was a good start for the beat.
Tokiiro no Mai - Wow sounds like a nation song, I love that.
All the Natsuki and Shizuru battles songs - Episode25.

It's a vocal piece; if it was played more often, it would have lost it's effect.
Shining Days burst froove mix. They didn't use it for the actual OP, so I muxed it in :) I've been wanting to karaoke (I wonder if I can use karaoke as a verb in this context x_x) it but haven't gotten around to it due to work.

Oh well, this is just as good.
Mezame - Awesome. Favourite track from the whole show. I plan on using in for the final boss battle in this D&D campaign I'm running.
Hajimari ~Yami he no Shoutai~ - This piece just fit the scenes it was used in like a glove. I'm also using it in D&D, for a BBEG's theme.
And, finally,
Chiisana Hoshi ga Oriru Toki - I have no idea why i like it, I like nothing else that resembles it, but it still rules.
I never liked the OP and the ED very much. Didn't hate them, but didn't like them.
Mezame - Judging from the above posts I doubt there is is there anyone on this board who dislike this song. :p Like "Captain Picard", I've used Mezame as a dramatic-theme in some pen-and-paper RPG:s.
Chiisana Hoshi ga Oriru Toki - I think the reason why I like this song is because it was playing during what was probably my favourite part of the entire anime. Go HiME Rangers!
Even though these two song are my favorites I have to say that I like almost all the music from Mai Hime/Otome.
(1) Its only the fairy tale
(2) Mezame (Way superior to ~MATERIALISE!~)
(3) Chiisana Hoshi ga Oriru Toki (one of my favourite scenes in the show)

Dun really like the OP and ED of Mai HiME too, for me it got kinda noisy after awhile :heh: I dun know why --> ED: Kimi ga Sora datta - I did like the calm start of the song, especially episodes when it the started before the credits, but when it got...erm... frantic? noisy? loud?... and the singer's voice started to stretch, not too nice animore.
I do like the first ED of Otome tho. An upbeat anthem.
(Btw, did anyone else think that they were listening to japanese lyrics when they first heard "Its only the fairy tale"?)
For MH, the OP and ED. For MO....the ED. Op didnt really felt genki enough...:heh:

*raises his hand*. Although, I wasn't too sure which language I thought the lyrics were, I was sure it wasn't English. And it was only when I read in this forum that the lyrics were in English that I actually noticed that myself when listening to the song. I suspect it was done deliberate to avoid spoilers, since there are a few of them in the lyrics. :)

Well keep in mind that it was sung by the seiyuu Yuko Miyamura who *does* have a heavy accent. She's sung other english songs for other anime with the same results. As for deliberate...they probably couldn't hire someone with a native english tongue to sing...and why would they since they know Miyamura can sing:)

Natsuki Sennyuu - What a mystery song hehe.
Shiromuku no Hime - Shizuru takes on her fight!
Ensei ~Omou Kokoro~ - She sings good.
Oharahetta! - Funny theme! I love how Mikoyo get's crazy during these songs!
Matamata Oharahetta! - I just love it, forgot when it happened.
Duran Shoukan - Duran get's summoned, always loved it.
