I'd bet my ass you'd like Juuni Kokuki. It's very epic, and well-made, too. I simply haven't gotten around to watching it because of my limited HD space (and because I have a lot of currently running anime).
Since your more on the fantasy/action side perhaps watching:
-> Shakugan No Shana
-> My-HiME or Mai Otome
-> Simoun (although it's only up to 3 episode for now)

You mean the girls as the main hero? Hmm, lemme see...what animes you should try....I guess if you want something then...
-> D.N.Angel (not really that serious but it's a fantasy-like story. not much action but a good storyline nonetheless.)
-> Black Cat (definitely good. has tons of action)
If you don't like the first one, then Black Cat is recommended. Like I said, lots of action, storyline is good, and has a little mix of fantasy in it. I forgot to add! try Utawarerumono.

It may be not to everyone's taste, but Cowboy Bebop is pretty serious, despite its jocular facade. A ragtag band of bounty hunters group together to seek out different criminals in outer space while discovering themselves as they work together (and still not be able to eat properly because of their misfortunes.)
There are some episodes that are facetious, but the episodes directly connected to the story are really well-made in the sense that the characters grasp your heart and make you feel for them. This will become very obvious especially in the final episodes, which makes the ending a beautiful, mellifluous classic.

Yeah, it is mecha. But don't let that put you off. I hate mecha and Eureka seveN is one of my favorites. Unlike most mecha's, the focus of the story is really on the characters instead of on the battles. If you try a mecha anime, Eureka seveN is the perfect one.
