I just thought about something...you know all the hand positions that they do before a jutsu....they either have to have a really flexible hand, double jointed, or they are gonna have really bad arthritus when they are older...

Well... not really. All those hand positions look doable. And it's not as if they do it constantly, or have 80 pound weights attached to their fingers or anything...
Moreover, I'm pretty sure that carpals tunnel syndrome is developed by keeping your wrists in a rigid position while you move your fingers around. Because of that Nerve damage results at the wrist.

and I'll tell you that not all those hand seals are as easy as they appear.

It's also not limited to typing or hands, people who's job it is to lift up objects and move them can develope it from bending over so many times to pick up the object.

You get it from doing the same movement a lot, not from staying in one spot. So feel free to stay a computer chair potato without fear of Carpel Tunnel Ass!

I got carpal tunnel from lifting up my kid when she was an infant.
ouch!
I think the hand symbols are varied enough not to get carpal tunnel but I bet older shinobi with arthritis do slow down a bit and might have some trouble and/ or pain with certain symbols.

Yea Carpal Tunnels Syndrome dont seem to happen in the World of Naruto (Unless your talking about arm cutting off soul sealing techniques in other worlds Orchimaru)
Ive done all those seals :D Theyre not hard at all
You'll learn HOW to use the hands seals.
First you start with the simple Henge no Jutsu seal and learn more difficult seals from time to time.
You practice those seal so your fingers will get used to it...
Something like that :)
Of course, the stronger the Jutsu is, the tougher the hand seals.
