I would of used searched first or even looked down this forum as there is quite a few request of the same nature.
But i'll post a few a hopefully that will hope you out,
Now:

*The Melancholy Of Haruhi Suzuimiya (One of the best anime's i have ever watched)
*Ai Yori Aoshi: Enishi (I see you have seen the series but there is a kind of OVA series with a few episodes just putting it here if you like Ai Yori Aoishi)
*Shuffle!
*Love Hina (A classic in anime, but i would say its does drag a little with love story)
*Kanon 2006 (My favorite anime of all time, but be aware its not a full on Romance and it will make you cry or get teary eyed)
*Clannad (Really good at the moment but again its not a real Romance but its still good though)

Soon:
*True Tears (Jan 5th 08)
*Kimi ga Aruji de Shitsuji ga Ore de (Jan 5th 08)
*Ookami to Koushinryou (Jan 8th 08)
*H2O: Footprints in the Sand (Jan 4th 08)

I would 100% recommend "Haruhi" and "Kanon 06 and Clannad" but if you want more of a love story then maybe "Shuffle!" If thats not enough just wait like a few days for "True Tears" which looks a great prospect and also "H20" looks a really great prospect too as its male protagonist is blind, so i like its originality.
Hope this helps.

Shakugan no shana (man , its nice with those fights too)
There is a second season to Shakugan no Shana that I think is still airing in Japan which you might want to check out. There is also another series called Zero no Tsukaima that you might like, too (there seems to be a lot of cross-over of fans for these two series). It's about a boy transported to another world, where magic works and he has become the "familiar" (magician's pet) of a feisty young magic student.

Ai Yori Aoshi(got slightly turned off at first, but endured on adn finished it)
You may want to check out the second season called Ai Yori Aoshi ~ Enishi if you have not seen it yet. It's not quite as good as the first season, but still worth watching if you liked the original anime. Some other good "harem" anime are Tenchi Muyo! Ryo-Ohki, D.C. ~Da Capo~, or Mahoraba ~Heartful days (although some will argue the last isn't really a "harem" it has some of the same elements, and is very good). There is also a manga for Ai Yori Aoshi that you could check out if you really liked the series. The two seasons of the anime only cover about 2/3 of the manga, and leave off the actual ending.

Karin
Narue No Sekai
These are basically high school romantic comedy series, with the added gimick of the "vampire" and "alien" elements. There area lot of good stright school romantic comedies you could also check out, like Lovely Complex and Nodame Cantabile. Or, if you want to keep some sort of fantasy element, Midori Days, Kamichama Karin, Seto no Hanayome, and Nanatsuiro Drops are all good, too.

CCS(darn this one is long, but i remember watching it when it aired during my younger days)
Actually, if you wanted it on US television, what you saw was a heavily "localized" (i.e. butchered) version of the original anime. The un-dubed version is worlds better.

Sola
Lamune(recently watched, a nice break from action)
These are a bit more serious romance anime. If you liked them you might want to watch Hanbun no Tsuki ga Noboru Sora, I"s Pure, Voices of a Distant Star, or perhaps School Days.

Mahou Sensei negima(the ending was nice)
If you really liked the anime, I would strongly suggest you read the manga, too. It's still on-going (volume 16 in the US and vlume 20 in Japan) and is much better than the anime. ;)

Onegai Teacher- Sweet TeacherxStudent Romance.
Chobits- funny cute romance.
Gift~ Eternal Rainbow- love triangle

gift ~eternal rainbow~ - 12 episodes and most of them focuses on the romance between non-related siblings who were torn apart for 10 years.

ef ~a tale of memories~ - 12 episodes. focuses on the lives of 3 men and 3 women who deals with the hardships of their situation (*somewhat of a spoiler* = one of the female leads loses her memories every 13 hours). very touching, especially near and in the end.

onegai teacher - no nonsense romance. just a pure romantic development between a 'stand-still' student and his alien teacher.

clannad - 24 episodes(still airing). focuses on a delinquent whose life is changed by different girls in different situations. funniest series that was made by KEY.

Lamune - 12 episodes. one of my top 10 romance favorites. it has a slow romantic pace but its very realistic and very relaxing.

the place promised in our early days - OVA. a story about two friends who tries to save their childhood girl friend that is centered on a bigger plot.

zero no tsukaima - 2 seasons, 12 episodes each. while shakugan no shana has definitely more fight scenes(and is better at it). ZnT's male lead totally owns SnS's male lead and has more development on the romance section (although fanservice may get on your nerves)

kimikiss ~pure rogue~ - 24 episodes ( still airing ). a story about 2 male childhood friends and how they handle their love lives. i cant elaborate much because the plot still isnt clear, but i definitely recommend this one.

H20 ~footprints in the sand~ - ?? episodes (airs on jan. 8). about a story of a blind guy whose views(figuratively, of course) of the world is changed by three girls with different personalities. i liked the game and this is on my watchlist too.

With all of the Voices of a Distant Star recommendations I've seen, I'm very much surprised no one's suggested Byōsoku Go Senchimētoru, licensed in the US under 5 Centimeters per Second. Made by the same director as Voices..., it's arguably one of the most amazing, down-to-earth OVAs you may ever see. It really ranks high on my list, and I'm looking forward to it's US release.

I'm a little disappointed they didn't manage to release it last month as it had been announced some time ago, I wanted to watch it with my girlfriend as I was seeing her for the only week I've ever been able to spend with her in months. =(

Also, along with the Kanon/Clannad recommendations I myself recommend Air TV (made by the same studio as the Kanon/Clannad). It made me cry twice or even thrice throughout its progression, and watching it with my girlfriend for my second time almost made me cry again. I even recommend Toei's Air the movie, as it did a very fair job of portraying the main arc. The amount of depth behind Air TV is really what made it strike me so much in the end. Very well done, especially with it being one of my first tastes in the anime-romance genre ever.

ef - a tale of memories is one of my latest watches, and I would definitely recommend it. It has a very nice style behind it and takes a very interesting approach in presenting the different stories of the characters involved. Since you liked Sola, I think ef - a tale of memories would strike you in a similar light. Although the supernatural isn't made as obvious, it seems to have a nice influence on the progression of the plot, especially the story behind ef's supernatural aspect itself. It all comes together quite nicely, and since it's roughly the same size as AIR (around 12 episodes) it has an excellent amount of depth and storyline.

I would recommend Myself; Yourself and School Days if you prefer a more provocative, highly experimental approach at Romance. Actually, some even look at some aspects of those two as parodying the Romance genre. Myself; Yourself had potential and a quite a few sudden points with a lot of strength and depth but failed to deliver in the end. School Days essentially a reflection on how far one youth can go with messing things up for himself and everyone around him just to get a little "something-something" so as to say. If you enjoy seeing twisted takes of the Romance genre, then you may enjoy School Days. I stayed by it and it seemed to deliver for me, but I'm more than certain people will say differently - it all comes down to your own personal taste for those kinds of things.

Erm i just watched school days and um lets just say i m kinda freaked out for the moment at ceratin aspects of it.

Then Watched Zero no tsukaima 2nd season, but found some of the fanservice rather disturbing.............But it was worth the wait.I felt the ending was kinda funny and nice.Managed to drive away the horror i experience earlier.

voices of a distant star - OVA. a story about two friends who tries to save their childhood girl friend that is centered on a bigger plot.
Huh? That does not sound like the Voices of a Distant Star that I saw.

The anime is about a high school couple who are separated when one of them is chosen as a pilot for a mecha squadron and the other is not, during an interstellar war. The story follows them trying to maintain a long-distance relationship as they are separated further and further by space and time.

Kimi Ga Nozomu Eien should be at the top of everyone's lists for one of the best romance animes.

No way. I have to completely disagree. That wasn't a romance show. It was more of fodder for emo's and oversensitive people. /rant
