I am a fan of ridiculously catchy ending songs, like "Hare Hare Yukai" (the one from SHnY). My favorite, though, is "Onna no Ko Otoko no Ko," the first ending from School Rumble. Most people would probably find it irritating.
For soundtrack music, Melody of Oblivion is probably the best, but I love Azumanga Daioh's music. If you like the show, you should get the soundtrack.

Well unfortunately I cannot boil it down to a single song, despite my hard attempts. They are "Farewell song" and "IF DREAMS CAME TRUE," from AIR. "Farewell song" is easily one of the most optimistic endings I have ever heard in such a depressing anime, and hearing that song one last time in episode 12 was exactly what I needed as remedy. The full version is even more stunning, and it just ends too soon despite being over five and a half minutes in length.

Tying with the above is the insert for the movie, "IF DREAMS CAME TRUE." You know - I think this is the only song I have ever listened to that actually made me feel like shedding a tear. And the song's not even melancholy, either; it has very uplifting lyrics and the singer, although not perfect in her accent maybe, really does seem to reach out with her words. Songs that are plain-out depressing don't downheart me in the same way this song does, which is gushing with hope and beauty, especially in its lovely instrumentals.

Sorry to say, I can't choose between the two, but it was hard enough to get it down to these themes anyway ("We Are!" is extremely close, though...). So, yeah.

Finally there is a holy grail of anime music I have yet to find nor identify. There once was condensed movie version of Original Aura Battler Dunbine from the late 80s or early 90s. In the last scene, they played Lux Aeterna which was mostly orchestra with sopranos occasionally singing the text and then it burst into glorious 4 part fugue with the bass part singing 'Libera me Domine'. My BETA video tape recording of the movie version was not of sufficient quality to let me identify the music from the credit, and I have searched over 100 requiems, many by just music scores for recordings for those could not be found, and have not discovered it. I believe that music was used only for the movie version, but have not verified it so, for I have not seen the latest DVD re-release of original 49 TV episodes. The search for this music piece made me a sort of an authority in Requiems, but I would still love to get my hands on the music score and recording of that chorus. If anyone has any clue, or if it is also used in the 49th TV episode, please let me know, and you would make this old man very happy.

Onitsuka Chihiro is the greatest singer of the 21st century, in my opinion. Not just in Japan, but anywhere in the world. She has the skill with rhythms and phrasing of a Frank Sinatra or a Bob Dylan. And their ability to sell the meaning of a song.

And she has a great voice. Or at least she did until her throat operation. I don't know if she has performed since.

A lot of Jpop leaves me cold, but I love her. She grew up listening to American music, and I think her music (but not her lyrics) is more American than Japanese in some way. Her style is something like Sara McLaughlin crossed with Celine Dion. Her lyrics are raw, complex, and poetic.

My favorite song is Memai (Nausea), but other favorites are Ryuseigun (Shooting Stars), Suna no Tate (Shield of Sand), etc., etc.

Elfen Lied opening and closing themes, Ergo Proxy opening theme, Cowboy Bebop opening and closing theme, Neon Genesis opening, Paranoia Agent opening, Lupin the 3rd opening, and Samurai Champloo opening.

Right now it's a toss up between I Can't Sleep So Sadly, Pandora No Fune, and Tragedy of An Idol from Megazone 23, Yume Iro Chaser and Starlight Serenade from Metal Armor Dragonar and Melos No Youni Lonely Way from SPT Layzner, with a nod to Dog Fight and Yakusoku Wa Iranai from Macross Plus and Escaflowne respectively. Honestly though there are so many good ones from Mecha anime that its hard to say really. Those are just the ones that come to mind as being top favourites that I regularly listen too. Basically stuff you would hear in Super Robot Wars and 80's anime are pretty much my favourites. Oh and add Cloud Age Symphony from Last Exile as well as all Eureka 7 vocal songs and Colours from Code Geass (Those are the only songs post 2000 that have really REALLY stood out for me that haven't been featured in a Super Robot Wars game).

Veeeery hard decision. I enjoy quite a lot of music, but I rarely listen to a particular track without hearing the entire album.

But I really do enjoy Ajikan's 'Rewrite'. It was an OP theme for FMA, and that particular song made me a big fan of the band.

Actually Ajikan rarely write a bad song. They may have become a little more mainstream, but I love it. I can't stop listening to them!
