Yeah... Trigun and Escaflowne. Both 26 episodes long.
Trigun is made kind of like Cowboy Bebop.
After half of the series... it talks about the background of the character and it gets more interesting. Great action. Those two are some of my favorites...

In terms of recent anime, the people who like what you like generally also like Fullmetal Alchemist, so you should try that. And try Condor Hero while you're at it.

and since you saw Gundam Seed, try Gundam Seed Destiny too though the ending is crappy
