There's no real guides as all logos are unique and require different steps to complete. You need to know the basics of After Effects (and sometimes advanced) to replicate logos.

Of course. There are thousands of basic After Effects tutorials online. Heck, the first google result for "Free After Effects Tutorials" is http://www.videocopilot.net/tutorials/. I'd also suggest http://www.videocopilot.net/basic/. You can also try the other thousands.

Once you get the gist of those, logos will come.

It depends. For certain logos you may need Photoshop or Illustrator, whereas some can be done solely in After Effects.
