Trigun and Gungrave both have some good instrumental OP songs. Both are by Tsuneo Imahori. I prefer Trigun's guitar riff heavy H.T.

Cowboy Bebop's Tank, Gunsmith Cats' OP, Lupin III 2nd Season 4th Opening are all nice jazz pieces accompanied by a similar style of animation. I suspect the last of the three is possibly an influence on the former two.

Both the OP and ED of Ghost Hunt are pretty cool. The OP is kinda spooky and the ED is sad.

As for BGM, wow, there's A LOT to mention. Fate/Zero's BGM directly comes to mind. Also many BGM from Naruto (not Shippuden), Gundam SEED, Fate/Stay Night, etc.

Gundam Wing's "Just Communication" instrumental opening (closing on Cartoon Network in the US) never gets old for me.
