Where did you pick up this asumption that Neji can kill in one hit? The Neji / Hinata fight? Neji was only able to do so much damage through hitting Hinata's tenketsu throughout the fight then giving one might chakra based blow to the heart.
It wasnt a one-hit-kill at all. Especially seeing as it didnt kill Hinata, even
after the fight
