I think you're mistaking immortality with being hard to kill. Someone can be very strong and thus be hard to kill, but still not actually be immortal. Immortality does not automatically come with strength or an accumulating of power, that really depends on the setting of the story. Using the Harry Potter story as an example.

Also being immortal doesn't make one automatically strong either. Take Wolverine for example. Wolverine's biggest strength is that he can regenerate and that's certainly nothing to sneeze at, but there are still characters within the universe that are a lot stronger than he is.

Spoiler: Voldermort was damn hard to kill because of all the things he'd done to himself and set into place, but in the end he wasn't immortal no matter how much power he'd amassed and magical loopholes he'd jumped through to try and make himself immortal.
