Being a self-centered flake is what makes her attractive, in part because she is also smart and strong beneath that. It's as if the normal world bores her, so she keeps flitting from thing to thing, feeling to feeling, idea to idea. And she seems always to be coming out with her honest, if momentary, feelings.
Her contradictions are part of what makes her seem real. Her uncertainty makes her seem real. Her switching between certainty to uncertainty makes her seem real. In screenwriting, people say that you should always have contradictions in your characters, since that makes them feel more real. Truth is always stranger than fiction. To make fiction feel more true, you have to make it less reasonable.
