Anime-wise, check out Peacemaker Kurogane for sure. Do I gather from your OP that you're also interested in live-action? If so, I would recommend the yin-yang of Samurai films - The Seven Samurai, on which both Samurai 7 and The Magnificent Seven are based - the benchmark samurai epic by Kurosawa. And then, Twilight Samurai - a small, thoughtful film about the daily life of a humble, low-level samurai.
