He probably doesn't specialize in one culture of cooking, being able to cook and blend dishes to create an improved dish, since the dishes he made were from all over the world.

I think the bigger implication is that he used to be a ruthless chef as shown by his intimidating aura on the last page.
Asuras are a group of wicked deities in Hinduism who are constantly seeking power. When someone makes a reference to a god or a group of gods, they are more than likely referring to what they represent, not what they look like.
