I'm no animation expert, but these scenes seem like
rotoscope. Basically, they record the actual musicians playing, and then add an animation layover, essentially "painting over" the musicians/equipment/etc. to look like they're animated. I have no idea how time-consuming or difficult this is, as most of the animation layover is probably done by computers...
