Technically, according to Oda, each of the Strawhats is represented by a color:
Luffy- Red
Zoro- Green
Nami- Orange
Usopp- Yellow
Sanji- Blue (standard)
Chopper- Pink
Robin- Purple
Franky- Blue (Cyan)
Brook- Black and White (which can make Gray)
As for the colors of Haki, we've yet to see what kinds of Haki there are and what color they are represented by.
