I think she's the only thing that's kept him human. Without her he really would have become a sadistic murdering bastard. I think a part of him doesn't want to disappoint her and that part is what's kept those other impulses in line up until now. Remember, as far as we've been shown Gin hasn't killed a single soul in the anime.
