My recommendation would be HG kits from Gundam AGE line like HG AGE-1 Normal and many of its alternate forms. They're new, simple, and looks good.

Good call, it's easy, pretty fun to build, modern and great to pose.
I'm not a great fan of the anime but AGE models are quite cool because of their simplistic look and excellent posability.
