Sorceress in Diablo-verse seems to refer specifically to the women-only mage clan that split away from everyone else and devoted themselves entirely to elemental magic, which is why in Diablo 2 the sorc used fire, ice, and lightning.
Different from the D3 wizard, who seems to use all three elements, plus some sort of dark magic, plus spells of no element in particular or other elements.
