I think Chaos magic wasn't mentioned because it's too unstable, and no one can expect what it might do to a Mazoku. Sure, Levi got maimed by Arashi the one time, but there's nothing saying that Chaos magic won't help a Mazoku its used on.
Also, as odd as it is to hear Thoth like that, he IS the device of the Infinite Library's main librarian, so he's probably hooked up to one hell of a database for reference.
