The problem with an Ami/Ryuuji relationship is that there wouldn't be much emotional connection beyond sex, especially on the part of Ryuuji.
Nor would they be friends in the first place without Taiga.
Also, Ryuuji wouldn't get to be as lulz-worthy and housewifey with Ami around instead of Taiga, and that's one of the reasons Ryuuji is so awesome.
