It comes down to what it means to "reproduce the brain's structure" and "adquire it's properties". Her simple mind might change a lot after that...
But now that I think about it, I guess she wouldn't be that much of a monster if all it took was eating one brain to become human-like...
Of course, she might end up not eating even one and we won't find out how it works out exactly in practice.
