Because Caster's breaking the rules by summoning Assassin. She doesn't want her master getting ultra-paranoid at what else she might be planning behind his back.

With the advantage of surprise when she's completely unguarded. Koizuki has enough firepower to kill a servant but is lacking the supernatural technique to succeed head-on. If he gets the drop on one though, he can end it quickly.
