Actually, KnT isn't a shoujo. I can see why people would categorize it as such, but It's kind of just a general romance story (sort of like Fruits Basket; people often say it's a girly anime, but it's actually pretty general, it just happens to attract mostly girls). As for shounen romance, I wasn't even aware that sort of genre existed so I have no idea what anime even qualify as that. Eh.
Any way, I think you're out of luck. There aren't many anime like Spice & Wolf or Katanagatari with subtle/light romantic undertones. When the anime of Gosick comes out, I think you'll enjoy that, perhaps. But the main characters are younger, despite the adult tones present in the storyline. And we can all hope and dream for a Zaregoto anime, but I doubt it's happening. At least not any time soon, that is.
