In the anime so far, Kakashi versus Zabuza, but only because it lasted so long and never slowed down. But it only slightly tops Lee versus Gaara or Neji versus Naruto.

But it only slightly tops Lee versus Gaara or Neji versus Naruto. In the manga... Spoiler: Naruto versus Gaara is the greatest! Just a bit better than Orochimaru going up against Sandaime. And then there's the battle of the Sanin, which was awesome, too.
