Well if say you wanted something that's simple and easy to watch, you could start with
My Neighbor Totoro and
Kiki's Delivery Service.
If you want the more complex ones last, though Ghibli film's really aren't the complex,
Nausicaa, Porco Rosso and Mononoke should be last.
Everything else you can watch in whatever order you want.
