Kawamori's parents were radical PETA activists. Growing up, his diet consisted solely of force-fed tofu and uncooked vegetables. His home was a breeding ground for disease and pestilence, because of the dozens of stray dogs his parents kept bringing back so that they could have shelter.

His penchant for torturing green girls is a manifestation of his hatred for vegetables.

Apollo turning out to have been Pollon the whole time is an attempt to ironically punish mom and pops (using his fans as a substitute) for caring more about man's best friend than than the welfare of their son.

Apollonius/Fudo loves donuts because Kawamori was forbidden from eating dessert as a kid.

I think it makes as much sense as what has happened in the show.
