In my personal opinion, the way to distinguish between an Arrancar and a Vastrode would probably be...the mask. Since a Vastrode is still a pure Hollow, its mask should still fully cover its face and be completely intact. With Arrancars, their masks are still on their faces, but they tend to be broken up. That's my assumption anyways. Vastrode = Fully intact mask, Arrancar = Broken mask
As for who is Visored or not, that's the tougher question. They're Shinigami who gained Hollow powers...but in terms of looks, they don't seem to differ from that of normal Shinigami. And as we all know, Shinigami don't look any different from humans either. The only real difference between a Shinigami and a Visored, in terms of appearance, seems to be the Hollow mask. Hirako demonstrated that when he revealed his mask to Ichigo. So, in my humble opinion, the only way to identify a Visored is to look for someone who looks human, has a Zanpakutou, and a Hollow mask...which is difficult because if the other Visored are anything like Hirako, they don't go around flaunting their masks, so it'd be difficult to tell them apart from other Shinigamis... =/
