The fragment reference is referring to the theory of parallel worlds where things are set up differently. Such as if instead of Shannon and Kanon becoming servants, they would have been born in rich homes with wonderful parents; because then their fate would be different from the result of what on Rokkenjima.

And Beatrice enjoys making food analogies, especially the soup ones in a kind of stringed fashion. The cow analogy is just to show that she can pick her victims and no matter how they resist her, she is just as likely to do whatever she wants to with them.

I hope this helps, and BTW, the anime cut soooo much text that things like Fragments and such were barely even mentioned, amongst other things...
