Also I'm starting like Beatrice as a character more in this episode. She doesn't seem anymore like the detestable monster Battler makes her out to be...

You can almost sympathize with her... personality. She isn't cruel or spiteful just because she wants to be, but more like that's what she knows. It would seem like she truly doesn't understand the severity of her methods or the implications of her actions and thoughts. Given that smallish hint of her life in the beginning, her attempts to figure out just what Battler means to the point that she would listen to George's monologue means she doesn't have the mind nor understanding the thousand years of her life should have afforded her.
I'd say she best sheltered at best and became a witch much too young. I would go so far as to say that Eva-Beatrice's main point in the story by Ryukishi must have been as a reflective foil of Beatrice's younger days, when her mind and soul never matured having become effectively immortal at such a young age. She's so desperate to be considered a witch that she would both beggar herself for acceptance and cruelly crush others for the same result. During episode 3 she seesaws between both ends just to get the characters to accept her, much more for Battler.
She comes out a scared, lonely and confused child with so much power that she doesn't know what to do with it, power that both isolates her and makes her isolate herself.
