Suffice it to say that "unrequited love" was actually a major theme of that work, so there is no way to highlight that point except by showing heartbreak. The show covered two different examples of this in succession, and showed them both in different ways. I don't think at any point any heroine was "forgotten", but a transition occurred that was a bit understated (it required you to put a few pieces together that were less than obvious).
I would also say... I think it's quite possible for someone to have feelings for two different people, but only pick one in the end. You say that, in that show, they showed Airi and Shingo having "mutual feelings" (I think that's a bit debatable, but let's say that's true). But then, circumstances led him towards another girl, and they also had "mutual feelings". In the end, his feelings for the first met a wall (she got "friend-zoned"), and he went further with the second. The whole point is that there were multiple paths he could have taken, and he made choices based on his feelings (just as you ostensibly do in the games these are based off of). I can very easily see the same thing happen in KoiChoco, if they choose to do so. There is certainly a foundation for a relationship with Chisato, but there is also a basis for a relationship with other heroines. He may have "feelings" for multiple heroines, but choices and circumstance will decide which one he chooses as his romantic partner.
I'm not sure that I can agree that trying to create a unique show with an interesting twist ("so that it will sell") is necessary "something worse". You may not like it when they do that, but it's a common theme of romantic dramas across all different media. I don't think it's so wrong for them to tell that sort of story, but of course that's my opinion.
