Well when you save any picture as Jpeg you will get an
Jpeg option Box by varying the parameters you will be able to change the quality of Jpeg . the best range would be
7 [medium]

OR
You could save the signature as
CompuServe GIF which will take cave of quality and size . I save it in GIF
