Giant is more or less a neutral term, it doesn't say if it is a evil or good being. The word eaton much stronger connote man-eating monsters.
It is explained in the quote.
It seems Commie messed up a line near the end of episode 3.
Mikasa: "He's thinking that now he won't have to be separated from me."
But it should be the opposite of that.
Mikasa: "He's thinking about how he won't have to stay close to me anymore."
