As for the injury, as Used Can pointed out, Yasu didn't think of it making her 'furniture' until Genji and Nanjo told her something. Plus, we know she had no problem falling in love with Battler, but had to go through all kinds of worrying before she could get together with Jessica and George. Something must have happened between those two events that changed Yasu's view of herself, and that something was almost certainly that red guts scene, which is probably the first time Yasu called herself furniture.
So, I don't think it makes sense for it to be a disfiguring injury. The section hints that the injury has some sexual meaning. And, for all we know, this red guts scene could take place at the time that Kanon is created (and might give us a more satisfying explanation for that world switch than just "I need a brother because the man I love is gone").
I think there's one solution that adds up, if we take some facts into account: if Shkanon was true at some point in time, Shannon would have to dress up as a boy. Kanon is always quiet and stays to the shadows because Shannon isn't used to acting like a boy. If Yasu is Nanjo's son's daughter, then she's a girl. But Kinzo wanted Lion to be the successor, and knowing his tastes, that makes it much more likely that Lion was a boy. Add in the fact that, if someone tried to tell Yasu to kill off the Shannon character, she couldn't do that since it would mean giving up on Battler.
This could explain the whole Zepar/Furfur thing. Yasu is a girl, but Genji and Nanjo want to convince Kinzo that she's a boy masquerading as a girl. For this to work, they would need to convince Yasu that she was born a boy, even though she's physically a girl. The accident is the perfect excuse for this. Nanjo is an expert doctor, and Genji could probably tap into family resources to pay for any operation. Yasu seems to trust and respect Genji, and isn't likely to reject this explanation outright. Afterwards, Yasu would be too focused on trying to forget that fact to worry about researching whether such a thing is possible. Also, she wouldn't write this event into "the story of her life" that is EP7 for obvious reasons.
I imagine they would want her to quit as Shannon and start work as a boy, so that Kinzo could make a boy his successor openly. Yasu would be just as insistent that Shannon remain, and they would have to make a compromise.
