Because, sadly, the "yuri" term is too broad, too vague... Unless you purposely narrow its field of application down to its original core meaning only:

I mean, there's plenty of women who watch/enjoy regular porn too. Does that fact alone make 'porn' as a whole a woman's thing? Don't think so.
