He says something like, "This is unfortunate, if you had only held on a little longer. I'm sorry." Is he sad to leave her, or was he hoping she'd be dead as fried chicken?

I would have to sway to the side of "He wanted to take her with him"

...their relationship will probably be explained later on in the show, possibly during a future confrontation between the two. But I would put my money on the fact that Rangiku is probably the only person Gin really cares about and he will eventually betray Aizen.
