The problem with anime music is that after listening to too many of them they'll tend to end up sounding all similar and generic. =P
That said, not sure if it counts but atm I find
Animetal's cover of Iron Leaguer's OP pretty catchy:
Their Pegasus Fantasy cover is pretty good as well.
