I imagine Kabuto got his DNA long before that. Offer Deidara a cup of tea and then wipe the DNA off the cup.
Screw the Rock Lee joke manga. They should give Kabuto a spin off showing the lengths he went to collect everyone's DNA. But somehow he couldn't get Jiraiya's? Meh.
Oh and we learn that all the zombies can use their bloodline limits. So Nagato and Itachi are intact.
