The way I understand it, it all comes down to blood.

Kissshot sucked all of Araragi's blood, so to get back to normal Araragi has to suck back his blood from her. At the same time though he is also sucking what has become Kissshot's blood, and that's why she lost her powers and became Shinobu. When Shinobu sucks Araragi's blood, she progressively gets closer to her old vampire self, while Araragi turns back into a vampire.

I suppose that Shinobu doesn't try to suck the blood of other people only because her master Araragi would forbid that, but probably she would be capable of that.

Hanekawa loves Araragi but she believes Araragi and Hitagi are perfect for each other and that she loved him even more after he rejected her.

I think she loved him even more just because of the particular chara development she had in that book, not because he rejected her.
