It's always so hard to choose between Saber, Rider, and Caster (Rin and Sakura come right behind them though). It all really depends on the current mood I'm in or what part of the game I just played/what part of the anime I just watched. I'll go with Rider though, as she's my favorite at this minute but I'll give reasons for the two of them that don't get as much attention as the rest. And yes, spoilers based off what I know from the game. Anime watchers beware!

And yes, spoilers based off what I know from the game. Anime watchers beware! Spoiler for Rider: Just to get it out there... Rider is damn hot, probably the hottest TYPE MOON female in my opinion. She's also pretty much the only anime character I can really stand glasses on. But yes... Mr. Guy... think about her personality... In terms of Servant stats, she isn't too powerful, which I find is good. Though her main Noble Phantasm is up there with one of the flashiest and the most powerful I believe. But she's fast and her chains are a very unique weapon that always help spice up whatever battle she's currently in (think the curtain raiser!). And while she's very loyal and serious at times, it just makes scenes such as those at the water park and those with her two sisters even more funny. Spoiler for Caster: The evil, elegant, and beautiful Caster is next (with the voice of Jagara!). She's probably one of the more underrated character in my opinion. She utterly gets the shaft in pretty much all three original scenarios and only really stands out in UBW. At first you think she's one of those one dimensional type of midway bad guys but we later learn that she is a pretty good person. Sure, she dresses Saber up in a rather skimpy outfit and thinks of some pretty... odd things to do with her (animate this plz) but she's also a loyal house wife to the sensei and is utterly devoted to him. Her final scene in UBW works was quite touching, especially the CG. It's ironic that such a ghastly person can look so much like an angel.
