I think you're somewhat over-estimating Gilgamesh here. Whilst it's not
impossible that he has such things, it's highly unlikely.

Anyways, if we keep everyone in-character and same with the canon Sakura would only turn dark under extreme emotional stress which surely involves Shirou and him showing feelings to her. Not necessarily. HF with Saber not dying and Shirou not getting the GARm could work.
