Very interesting thread and I'd like to add a few myself but under different conditions of the OP:
Code Geass
*I'm not gonna say he's untouchable and he obliterates his enemies, but he's omnipotent, whether his power is used for the right or wrong reasons.

What I mean by "omnipotent" is that he brings Britania-the largest/strongest nation of that anime-under his control in a mere month or so, can sway others to believe him with OR without his power, betray but at the same time, not betray his fellow comrades, and at the end, creates a new world where tyranny is gone. What other anime can you find all that in :P

Fate/Stay Night - Unlimited Blade Works
*Untouchable? Maybe not entirely. Able to obliterate his enemy? Possibly. Not bad for a once ordinary human :P

How much more epic can a character be when the character himself, an almost ordinary (with the exception of his imaging power) human being fighting and defeating his future self where he becomes a hero, a hero that was supposed to be part of the Holy Grail war. I think amassing bajillion swords and changing the area into a "reality marble" is more than enough to obliterate an enemy without even fighting...just sayin

Death Note
*Definitely untouchable and able to obliterate his enemies

You're dead as soon as I think of you and write your name in my book! That's definitely considered untouchable to me as well as able to obliterate your enemy with reasonable bounds.
