These are the two shows that came immediately to mind for me, too.
Monster has a bit of a slow start as well. Then it becomes as compelling as any series I've watched.
The first episode of
Bartender is one of the weakest. I would have dropped the show had I not watched the brilliant episode two. After that it became one of my favorites.
