Maybe Big Mom will go into rage mode and try to destroy the whole island, which might lead to a Luffy + Jinbei vs Big Mom. This seems like a kinda fair match to me. Her crew didn't get too much info, so I except the other strawhats to be able to handle them. There is also the possibility that the princess will call some sea kings to help the strawhats or something. I really doubt the fishmen still hate Luffy after he saved the island and would just let him get beaten by anyone. I'm pretty sure that someone will intervene/help the Strawhats.
I'd guess the Gorosei were at least VA level fighters in their days, but I doubt they could still challange a Yonkou. If they would be so strong, they would have helped during the war and kinda destroy the balance.
