Escaflowne is my all-time favourite soundtrack. It's just
epic. Other stuff by Kanno Yoko are great too, especially Bebop, Wolf's Rain, GitS, Macross Plus and Arjuna. She's my favourite composer if you can't tell by now.
I am also absolutely in love with the soundtracks of .hack//Sign and Seirei no Moribito.
