Well right now I'm all about the Orguss, Mospeada and Dragonar OST's. There's something to be said about 80's anime music that you just can't say about modern music. It was more about the whole ensemble of instruments and the catchy tune than the idol doing the opening song back then. You can't detect a drum beat in almost any modern anime song I swear to god. Well that styles kind of made a come back and the ones that have a drum beat you can hear are the ones I like these days and they are becoming a bit more common again.

I've stopped to count in OST's and started to keep an eye on entire discographys. Here my all-time favorites:

Key Sounds Label (AIR, Kanon, CLANNAD, planetarian ...)
Motoi Sakuraba (Star Ocean EX, Saiyuki, ... [I won't mention his massive VGM Disco at this point + works in the 80's like Barque in the Future Best progressive rock, imo.])
Yuki Kajiura (NOIR, .hack//SIGN, Mai-HiME, Mai-Otome, Tsubasa Chronicles, MADLAX and a few VGM OST's like Xenosaga's.)
Taku Iwasaki (Rurouni Kenshin Tsuiokuhen/Seisouhen, R.O.D., Witch Hunter Robin, Yakitate Japan, ...)
Shiro Sagisu (Bleach, NGE, Megazone 23, Kimagure Orange Road,...)
NUMBER 201 (Fate/stay night, Fate/hollow ataraxia, ...)
Kou Otani (Shakugan no Shana...)
Mitsuo Hagita(Record of Lodoss War...)

I don't listen to soundtracks because I like/dislike a specific anime. The music itself is important to me. Same goes for VGM. There are some very skillfull artists hidden in the universe of anime/gaming.

Mushishi and DEATH NOTE. Although DEATH NOTE'S OST had very few songs I actually liked. As for movies, all of Miyazaki's films in which Joe Hisaishi was the composer.
