Now I won't lie, you have to believe me and put all your trust in me; a complete stranger.
Go and watch Kimi Ga Nozomu Eien as well as Elfen Lied consecutively....
...
...
...
...After a couple of months you'll realize the endings were good.

I actually do think these are great endings, but I doubt they meet any of your requirements.

So, how about:

Macross - literally everyone, left living, is happy.
Nadesico - again everyone is happy, for some reason or another.
FLCL - well they are not unhappy.
Wow, saikano and good ending? Ur crazy..

Record of Lodoss Wars OAVs.. an old series, hardly mentioned anymore, but I liked its ending.

Full Metal Panic: TSR, although novels continue, the TSR series ending just made me yell "Hell yea!"

Nooo, I dont mind Kimi Ga Nozomu, but Elfen Lied was the worst anime ever(not literally, I thought it was one of the best animes ever). The anime makes you hate Lucy at the beginning, and right before the end they hit you with how hard her life was, and then you start to feel sorry for her and want her ending up with Kouta. All the ending did(being a romantic anime watcher) was rip my heart out and serve it on a plate...

Spoiler for Elfen Lied:

Maybe it's a coincidence, but most of the animes I watched have happy endings . So here they are (just the ones with happy end.):
Romance: Hantsuki, REC, Myself;Yourself, True Tears, Ef - A Tale of Memories.
Romance/SF: Elemental Gelade, DearS, Chobits, Inukami, Zero no Tsukaima, They are my Noble Masters, Elfen Lied (depends on how u look at it), Spice and Wolf, maybe Sola (but rather not), Rosario+Vampire.
Comedy/Romance/SF&others: Seto no Hanayome (definitely), Full Metal Alchemist, Hellsing, Yu Yu Hakusho, Death Note (cause all things become normal again - but probably u won't think the same), Inuyasha etc.

Kind of surprised no one's mentioned original Gunbuster's ending. Gotta love how it tricks you into think it's going to be a downer and then those words appear on the screen.

second Manabi Straight's. It made me feel all nice and fuzzy inside.

Even though you never want it to end, I must say Azumanga Daioh and Lucky Star for the moment.
