But to him, Sakura was family. The "family" he always wanted was with Aoi, so he looked at Sakura as such, and thus would do anything to protect her as a "real" father should.

Spoiler for Zero: His "family" is the Matou family, and as far as he is concerned, they can all rot. He just wants to save Aoi's daughter, and re-unite them so Aoi can be happy. What makes it so tragic is that it's all a huge misunderstanding. Aoi doesn't want him to kill Tokiomi, and if Tokiomi knew what Zouken was doing to Sakura (and what he planned to do to her), then I don't think he would have any objection whatsoever to levelling the Matou house and rescuing his daughter. In the end, the war goes horribly wrong for him, and he actually makes things worse for Sakura and Aoi.
