Summonings? Have you seen any of these??

Ayakashi
Onmyou Taisenki
Rental Magica
Shounen Onmyouji
Tactics

I hate to point out that none of these are anywhere near Final Fantasy summons but it fits the criteria, nonetheless.

Fate/stay Night.

This anime sort of has summoning as each person is summoned to fight.

And a perfect example is Kiba. It's sort of like Pokemon in a way but better

Fate Stay Night is a must. Spirits of heroes long dead summoned to fight for their masters. A really great anime series.

Mai HiME is another series that utilises summoning great beasts to fight for them. Really starts to pick up mid-way through the series.

Scrapped Princess fits that bill to an extent, but it's not the focus of the show. More fantasy and character driven, with that on the side.

Crono Chrusade also works. A great anime regardless.

Shakugan no Shana? I suppose that would count.

Ga-Rei Zero has spiritual summonings.
