You should try:

Katanagatari

A Certain Magical Index
Madoka Magica (don't be deceived by the first three episodes, it's not really that girly, the AMV I linked is more representative of the show).

Perhaps Shakugan no Shana
Chrome Shelled Regios
Otome Yōkai Zakuro
Or if you are willing to go older Inuyasha.

There are some other great action series I can think of, but they are not fantasy.

Berserk is a good one.

Ga-Rei Zero - not fantasy setting but also good.

Mirai Nikk could be to your liking but also based in our world.

Baccano maybe?

You could also try Code Geass.

Fate/Zero is good. Mix of fantasy and our world.

Mahou Shoujo Madoka★Magica - first 3 episode are tricky, gets good after that.

Psycho-Pass are good series. Same creator as Madoka. Amazing villain.

Phantom: Requiem for the Phantom is good.

Samurai Champloo is pretty unique.

Something more FMA like:
Hunter x Hunter - while might look childish at first, it gets pretty serious. Phantom and Chimera arcs are great. There are two versions, each one has their own pluses and minuses. I watched both. The new one is still ongoing.

Magi is pretty good. Has comedy but also serious moments.

Kamisama no Inai Nichiyoubi maybe?

Seirei no Moribito is really good.

Zetsuen no Tempest

I second Seirei no Moribito, is really good and the animation is impressive.

The author of the Moribito series, anthropologist Uehashi Nahoko, wrote another fantasy novel that was animated by NHK and Production I.G like Moribito was. It's called Kemono no Sou-ja Erin. It targets a slightly younger audience than Moribito, but it still has a complex story that appealed to older folks like me and my then teen-aged daughter as well.

Baccano! has a fantasy plot, a cast of adults, and lots of "action." You might find it too comedic though.

Mnemosyne might have some appeal though I found the first half of the series more compelling than the latter. It has a bit more material that appeals to "prurient" interests like watching the main character be stripped and tortured by another woman.

I'm also going to suggest Monster, though it doesn't have a fantasy plot. It certainly has the kind of serious mature story you seek.

Hm, maybe try Mushibugyou. It started in the same season as Attack on Titan (and they're fighting giant insects before things get weird).
